Delicious Living: Recipe-Sausage, Beans and Greens

This recipe is an adaptation of one that Michael Symon made on the new show is on called, “The Chew” with Mario Batali and Clinton Kelly Daphne Oz and Carla Hall.

Last week, we (my hubby and I) decided to make it when the temperature lowered and it was raining outside. BOY! Did this hit the spot! We made a huge patch thinking we would freeze some of it for another day, however, it didn’t make it past the next day.

Sausage, Beans and Spinach Soup

1 lb of mild Italian sausage (you could also use hot Italian or turkey sausage too)
3 cloves of garlic minced
1/2 cup onions chopped
1 package of frozen spinach – thawed and drained(you could also use kale or collard greens)
1/4 cup yellow and/or red pepper chopped
2 cans of great northern beans (or you could use dried)
1 – 32 oz chicken broth
salt and pepper to taste

Heat skillet to med high with 1 tsp of canola oil. Add sausage in 1/2 inch slices. While meat is cooking, take spinach out of freezer to thaw.Cook sausage thoroughly. Transfer meat from skillet to stock pot or crock pot. Add in chicken broth. Add onions, garlic, spinach, peppers, beans to pot. Stir until combined. Season to taste.
Cook on low for 30-40 min.
